Forging the soul of the grasslands with the flames of nomadism, the arm bone, the toughest part of the cow's body, is slowly roasted for 12 hours, turning into a crispy shell on the outside and a gelatinous, rich, flavorful inside. We select the front leg joint of a yellow cow that grazes on the grasslands and roast it using ancient methods in a traditional clay oven in Chifeng. Simply seasoned with coarse salt and wild chive flowers, the intense flame draws out the rich aroma of fat from deep within the marrow.
